600 g zucchini

20g butter
1 shallot
6 eggs
1 tablespoon Maïzena
1 teaspoon olive oil

Zucchini flan with bitter orange vinaigrette

For the bitter orange jam vinaigrette

Mix a tasty spoonful of Bitter Orange Bittermeat Jam in olive oil. Add the juice of half an orange and whisk well. Rectify seasoning according to taste.

Sauté the finely chopped shallot in a pan with olive oil.

Add zucchini, salt, pepper, and cook over high heat at first, to remove all water from zucchini; then cover and continue to cook more gently until you get a 'marmalade'.


In a bowl, beat the whole eggs and add the spoon of Maïzena and beat again.

When the zucchini is ready, add them to the egg mixture.

Correct the seasoning and add the chives.

Pour the whole into a buttered cake and put in the oven, in a bain-marie, for 40 mn at th. 5.

Check the cooking with the tip of a knife (which should come out smooth).

Leave to cool in the fridge (3 hours minimum), then unmold and serve with Bitter Orange Bitter Orange vinaigrette.

Can prepare the day before or two days before.
