Steps

Wash and squeeze the arugula.

In a large skillet, heat the oil. Fry the gnocchi over high heat for 4-5 min, until golden brown and crunchy and soft at the same time.
Step 3
Pour the gnocchi in a salad bowl. Season them with the vinaigrette, mixing gently.
Add the arugula, mix and serve immediately: this salad is tasted warm.
