ingredients

180 g of Sainte-Mure in-between
1 small red pepper
15 mint leaves
50 g raisins
100 g of corn flower (Maïzena)
125 g flour
1 sachet of baking powder
3 eggs
2 tbsp. to s. olive oil
5 cl of milk

1 soft (or non-stick) mold of approx. 9 x 24 cm

Steps

Cake with goat cheese and peppers

1- In advance : put the grapes in a bowl with water at height; make them inflate 1 min in the microwave; drain, dry on a cloth.

2- Prepare the dough : mix in a salad bowl Maizena, flour, yeast and salt. Add the eggs, mix. Mix gradually with the oil and the milk. Pepper with the pepper of the mill. Preheat the oven to 180 ° C (item 4).

3- Fill in : add pepper cut in small cubes, finely chopped mint, raisins and finally goat cut in medium dice.

4- Cook : pour into the mold. Bake 40 minutes approx. : the cake must be swollen, golden, a needle pressed to the heart must come out dry.

tips

Health . The corn flower gives a great lightness to the dough. Take the opportunity to replace the standard flour with organic 80 type flour: it will not densify the dough too much and will provide more nutrients.

To taste . Unmould, let cool completely on a rack. Cut into slices and cubes, serve as an aperitif or tapas with wooden pikes.
