500 g strawberries
10 fresh mint leaves 4 shoots
5 leaves (10 g) of gelatin
70 g of flour
1 big egg
15 cl of milk
100 g of sugar
1 sachet of vanilla sugar
Icing sugar
10 g of butter

Steps

Step 1

In advance: briefly wash the strawberries in the colander under the tap, dry, plant, mix them with mint and sugar. Pour into a saucepan, add the gelatin leaves. When they are soft, heat on low heat while turning. As soon as the gelatin is melted, pour gently into the glasses. Place at least 2 hours in the fridge.

2nd step

At the same time : mix in a flour bowl, vanilla sugar and a pinch of salt. Dig a hole in the center, break the egg. Turn from the center gradually incorporating the flour falling from the walls. Mix with the milk; add the melted butter while beating. Let stand for 1 hour. Then cook 4 pancakes.

Step 3

To serve: briefly immerse the base of the glasses in hot water, peel the turn of the pulp cylinders to the bottom with the knife; unmold. Surround each cylinder with a pancake; cut the excess at the ends. Sprinkle with icing sugar, put the mint sprouts.

Strawberries.

To find in the spring rolls their intense fragrance, choose a very aromatic variety (Gariguette, Ciflorette ...).

The Red Label has been awarded since 2009 to the producers of Lot-et-Garonne. It guarantees an environmentally conscious culture (fight against parasites by "friendly" insects, pollination by bumblebees ...) and strawberries are harvested with good maturity, with a minimum sugar level.

Adeline's ideas . To cook the pancake well: Finely butter the non-stick pan with a brush, only for the first pancake. Heat the pan over medium heat. It is ready when a drop of water evaporates almost instantly. Pour 1/2 ladle of dough by tilting the pan in all directions to distribute well. Cook the first side 2 minutes. Peel the edges and turn the pancake with a spatula. Cook another 1 min.
