Crab in the centerpiece

A good sized crab can be eaten alone as a main course. To prepare it, the crab must be immersed for about twenty minutes in boiling water mixed with vinegar and salt. It must then be peeled to remove the inedible parts: viscera and gills. Pass the crab under water to clean it thoroughly. It can then be served with a garlic butter. To make garlic butter, simply mix butter, mustard, pressed garlic , fleur de sel and pepper. You can also prepare a tasty stuffed crab. In this case, it will remove all the flesh of the crab and thoroughly clean his shell. The flesh should then be mixed with bread crumbs soaked in milk. Cook for a few minutes with sautéed onions, chives, chilli and thyme. Garnish the shell with this mixture. Sprinkle with bread crumbs and bake for about 10 minutes. To serve preferably with well cooked slices of plantain !


The many uses of crab meat

Once your crab is boiled and peeled, you can use it in many recipes. For example, to prepare a tasty crab omelet, start by crumbling the crab meat. Cook for a few minutes in the pan in oil with chives. Beat your eggs, season them with pepper and salt and pour into the pan. Add grated cheese on top and finish cooking your crab omelet. A delight to eat hot! Crabmeat can also be added to a mixed salad, bean stew or soup. For a refreshing entry, the grapefruit / crab wedding, particularly happy, can easily be declined in verrine or salad. Simply mix crumbled crabmeat, mayonnaise and pink grapefruit pulp for a feast!
