A new food trend, set up as a fast-food star on social networks, porridge has many nutritional virtues. And if we let ourselves be tempted by the new recipes revisited of oatmeal?

A bad reputation (almost) relegated to oblivion

If porridge has long had a bad reputation - it was served as a punishment to children of British correctional homes or adult prisoners, the phrase "doing porridge" meaning "to make prison" in English - it is increasingly popular by the eating-healthy gurus.

Consumed almost daily in Slavic and Anglo-Saxon countries, porridge is gradually imposed on our tables, especially at breakfast time.

Sweet or salty, each with its oatmeal

If it is very common in its sweet version, to be enjoyed in the early morning to start the day, the porridge is also appreciated in its salty version. This is even the challenge that the first porridge bar in Paris, the Bol Porridge Bar, has set: to offer sweet and savory recipes that change every week, to make (re) discover the oatmeal to the greatest number.

Prepared with millet or corn flakes for a gluten-free recipe, porridge is also eaten at breakfast, in Bolognese sauce or with seasonal vegetables. From now on, we prefer even vegetable milk (oats, coconut, almond) to prepare it. No more "heavy" porridge, hard to digest.

Porridge, a dish slimming and longevity!

If the virtues of oats on weight loss are more to prove, a study conducted by researchers at Harvard University published in 2015, says that consuming a bowl of porridge a day would help improve hope of life and health. Indeed, after observing for 26 years diets of 100,000 people, researchers have noticed that people regularly eating complete seeds (rice, quinoa, oats ...) live longer.

The risks of diabetes, cholesterol and cardiovascular diseases would also be significantly reduced.

Beware of overconsumption however: too much oat can induce bloating or flatulence.

How to cook your porridge?

For dietician-nutritionist Ariane Grumbach , porridge is yes, as long as you appreciate the taste: "My motto: never eat something healthy if you do not like it to taste", insists. expert. If there is no problem on this side and we want to start a preparation of homemade porridge, the latter recommends especially "do not eat its natural porridge, but to add dried fruits or fresh fruit ", to avoid the addition of sugar and to diversify the flavors.

For a big bowl of porridge, it takes a good quarter of an hour of preparation. It is therefore possible to prepare it the evening before and to dilute it with a little milk in the morning.

Ingredients: 50 centilitres of choice vegetable milk, 50 grams of oatmeal (or other cereal), some honey or maple syrup to sweeten and fruits, dried fruits or even chocolate chips for a gourmet porridge and appetizing.

The preparation: we start by heating the milk in a saucepan. Once the milk is hot, pour the cereal flakes in rain, then let it cook quietly, at low heat, for about ten minutes, while stirring regularly.
When you get a creamy texture, it's almost ready, we just have to dispose our berries, our red fruits, bananas and other chocolate chips and to taste our porridge still smoking.
