Fruit salad :
250g strawberries
1 tray of raspberries
A little currant
1 tablespoon shaved sugar powder
grated zest of 1/2 lemon yellow
1/2 liter to 1 liter of sorbet Banana Gold Card
10 to 15 cl of orange juice
4 speculoos

Steps

Step 1

Place the plates in the freezer for at least three hours before making the dessert.

2nd step

In a salad bowl, cut the strawberries and cut them in two or four according to their size, add raspberries and currants, lemon peel and sugar. Mix and reserve in the fridge.

Step 3

Crush the speculoos.

Step 4

Just before serving, prepare the Banana Gold Card Sorbet Mousse . Mix 1/4 of the sorbet with a little orange juice. When the mixture is homogeneous, add sorbet and a little orange juice and repeat until you get enough foam for the 4 plates. If the texture seems too thick, you can add a little orange juice.

Step 5

Divide the banana mousse on the plates and then the fruit salad. Sprinkle with crumbs of speculoos and enjoy.
