A highly pastry custard, almost gastronomic. Let's forget the surface gloss (questionable) to linger on the puff pastry, as golden as crisp. The cream, slightly flickering, thicker than normal, sprinkled with vanilla beans, is already appetizing to see. But once tasted, it's even better: a smooth and creamy wonder, with powerful aromas of bourbon vanilla. 3.50 euros.

A blank that comes out of the ordinary: by its weight (it weighs in hand) and by its thickness. If you feel like your money, the aspect is not flattering (paler). The crushed pastry is crisp (except in the center) and the cream, which looks wet to the eye, looks melting. And indeed, it is incredibly soft, deliciously vanilla. One criticism: impossible to taste while walking ... 2,70 euros

Born in 1927, this pastry was especially famous for its macaroons. Today, it is his flan that seduced us, with its leopard tones, its multitude of small black grains, its puff pastry very crisp (a little less at the tip) and its good smell of vanilla. As for its texture, it is perfect: a balance between slight resistance under the tooth and melting on the tongue. 2.80 euros.

To the eye, this is the big winner of this test. A beautiful golden color, with a generous shiny cream, which stands well but without seeming too firm (just to look at it, we feel it will be soft), this flan is irresistibly attractive.

No mistake: the ultra-thin puff pastry goes by itself, and the cream confirms its softness in the mouth. A little regret: vanilla lack of presence. 2.50 euros.
