For the blanc-manger
8 speculoos
2 bananas
2 pinches of curry
280 g unsweetened coconut milk
4 g of gelatin leaf
120 g of whipped cream

For the decor
Roasted coconut roasted
A few pinches of turmeric

Steps

Step 1

Crush the speculoos into a fine powder. Eplu-at bananas, crush them with a fork, add the curry, mix.

Warm up 50 g of coconut milk, add the softened gelatin in cold water, mix, let it melt, then pour the rest of the coconut milk. Stir in the whipped cream (soft whipped cream).

2nd step

Place the 4 circles 6 cm in diameter on 4 plates, spread the powder of speculoos and tamp. Fill in half with blanc-manger, spread the banana puree in the center and fill in with the rest of blanc-manger. Smooth the surface. Allow at least 2 hours in the refrigerator.

Step 3

To serve, remove the circles by passing the tip of a knife on the outline. Sprinkle with grated coconut, powder with turmeric, arrange some currants.
