Steps

Step 1

In advance: Preheat the oven to 210 ° C (Tea 7). Unroll, cut the dough into 8 squares. Spread their paper on the plate, place the squares on them without touching them. Coat egg yolk with a brush. Bake 6-8 min: the squares should be lifted, golden brown. Peel the beans.

2nd step

15 min before serving: immerse the beans for 2 minutes in boiling salted water; drain. At the same time, put in a saucepan cream, lemon, sesame oil, powder the cornflower by whisking to dilute. Turn over medium heat to thicken and bind; salt, pepper. Keep warm.

Step 3

Serve: fry salmon with olive oil. -Pose a puff pastry by plate. Top with sesame cream, beans, sesame, chives, salmon in large leaves, fleur de sel, puff pastry. Sow the rest of the beans. Serve warm.
