2 supreme farm chicken from the Landes
8-10 tomatoes confit with olive oil
1/2 bouquet of basil
10 cl of dry white wine

Steps

Step 1

In advance. Drain the candied tomatoes on a sheet of absorbent paper. Stretch the basil, chisel it roughly. Escalope the chicken supreme: open them in half lengthwise without completely separating the two parts. Salt lightly, pepper. Garnish with tomatoes and chopped basil. Secure the two parts with wooden spikes. Book fresh.

2nd step

30 minutes before tasting. Heat the oil in a pan, put the supreme on them, brown them delicately 3-4 min on each side without browning. Deglaze the frying pan with white wine, let simmer for 1 min, lower the heat to a minimum, cover. Cook for about 20 minutes, turning over supreme once or twice. Cover them with sauce regularly during cooking. When serving, cut the supreme into pieces and enjoy without delay.
