1.4 kg of good golden apples
135 g sifted flour
3 big eggs
45 g 40 g of sugar
15 cl of milk
15 cl of cider
45g of butter 1/2 salt
1.5 cuil. to s. vanilla sugar
2 tbsp. to s. lemon
Icing sugar
1 vanilla pod (optional)

Steps

Step 1

Peel the apples whole, remove the heart to the apple dump. Cut them into large slices, put them in the pan with 1 dl of water, salt. Cover, cook 7-8 min over medium heat.

2nd step

As soon as the washers are soft, remove the lid and cook until the remaining water evaporates. Add lemon, 45 g sugar, vanilla sugar, mix, remove from heat immediately.

Step 3

Mingle the flour and 40 g of sugar, dig a hole, break the eggs. Mix with a hand whisk and gradually add the flour to the eggs. Mix with the milk, then the cider.

Step 4

Let the dough rest for at least 30 minutes at room temperature. Melt the butter in the pan over very low heat, pour it into the dough without stopping.

Step 5

Heat the nonstick skillet over medium heat. Pour 1 small ladle of dough by tilting the pan in all directions to cover its entire surface. When the bottom is golden brown, turn over with a spatula, cook 1-2 min.

Step 6

You get 13-14 thin pancakes, rather mellow. Stack them on a nice dish spreading each with a thin layer of apple. Sprinkle with icing sugar. Put the vanilla bean on the pancake cake.
