1 egg, 25 g caster sugar, 100 g flour, 12.5 cl semi-skimmed milk, 10 cl coconut milk, 1 tbsp. Maizena coffee, 30 g icing sugar, 1 tbsp. unsweetened lean cocoa, 20 g dark chocolate pastry (60% cocoa), 4 tbsp. grated coconut, 1 pinch of salt.

Two hours in advance, whip the sugar with the egg yolk for 1 min, then add the flour gradually and dilute with the cow's milk.
Leave to rest in the refrigerator.
Just at the time of serving, beat the egg white with a pinch of salt. Stir in the dough.
Cooking.
Cook the waffles in a waffle maker.
In a bowl, dilute some coconut milk with the cornstarch, then add the remaining coconut milk.
In a small saucepan, mix the icing sugar, cocoa powder, chocolate cut into small pieces.
Heat over low heat, slowly adding the mixture of coconut milk and Maïzena.
Stir with a wooden spatula until thickened.

Arrange a waffle on each plate and cover with chocolate sauce, then sprinkle lightly with grated coconut. Good to know. This waffle is to be taken for dessert during a lunch, preferably. You will have previously served crudités (for the vitamin C supplement ) as a starter and a dish without starch, because this element is already present in the menu through the flour. Active children can also eat this waffle during a snack.
