2 blood oranges
1 roll of broken dough
25 cl of fresh cream
4 big eggs
200 g extra-fine sugar

Steps

Step 1

Preheat the oven to 180 ° C (tea 4). Unroll the dough on its paper, line it with a pie dish of ø 25-26 cm. Prick the bottom of the mold well. Bake 15 minutes.

2nd step

Mingle eggs and sugar. Add the cream and the squeezed juice of 1 orange. Peel the other orange, cut it into thin slices.

Step 3

Take out the dough. Pour in the cream, put on the orange. Bake for about 30 minutes : the cream should be taken to the center. Taste cold.

tips

Choose a pure butter paste to avoid trans fatty acids; it will still be cholesterolemic, but will deliver a real scent of hot butter.

This is a recipe for very sweet beaks: for a more balanced flavor, put only 120 g of sugar and mix with the cream the zest of 1 grated orange fine: it will add its bitter note.

 

If the dough has swelled while cooking , pierce the bubbles and flatten them immediately, as long as they are a little flexible, with a gloved hand.

If your oranges are organic , you will not need to peel the fruit before cutting it into slices: the bark will also help balance the taste of the pie with a hint of bitterness.
