ingredients

125 g flour
80 g of soft butter
90 g of sugar
2 eggs 1 for gilding
1 pinch of baking powder
1 pinch of salt
1 jar of black cherry jam

1 tart mold of ø 20 cm

Steps

Step 1

Prepare the dough. In a salad bowl, mix the butter with the sugar, the pinch of salt and the yeast. Add 2 eggs one after the other, then the flour. Knead, put the dough into a ball. Shoot and book for 1 hour in the refrigerator.

2nd step

Preheat the oven to 150-160 ° C (item 5).

Step 3

Rework the dough to soften it, then roll it on a floured surface.

Step 4

Using the inverted mold, detail two ø 20 cm x 6 mm thick discs.

Arrange the first disc at the bottom of the buttered mold, garnish with cherry jam, leaving 1.5 cm around. Cover with the other disc, solder both with your fingertips. Brush with beaten egg and line the surface with a fork.

Step 6

Bake 35-40 minutes. Let cool before unmolding: the Basque cake is eaten at room temperature.
