In advance: mix in the bowl 60 g butter, egg yolk, sugar and almond powder. Unwrap the dough on its paper; cut out 4 rectangles as large as possible. Paste on paper, put them on the plate; keep in the fridge.

Prepare the melon: cut in 4, seed, bark. Cut each quarter into 4-5 thick slices. Cook 3 min in the pan over medium heat with 20 g butter; turn over, spread the honey, cook until caramelizes slightly. Get out of the fire.
