ingredients

4 slices of smoked salmon
200 g of fresh ewes
2 grapefruits
100 g rocket
1 bunch of coriander
5 g crushed pink berries
4 tbsp. to s. olive oil
Flower of salt

Steps

Step 1

Prepare the grapefruits: wash, dry them; take the zest into filaments. Peel them on a plate. Remove the areas without the skin, cut them into cubes.

2nd step

Prepare the filling: mix in the large sheep bowl, zest, 3/4 of the pink berries, half of the chopped coriander. If necessary, add a little juice from the plate to obtain an easy-to-spread dough. Mingle in the small bowl oil, pepper mill, chopped coriander rest.

Step 3

Assemble: lay the salmon on the film. Coat with coriander oil. Spread dough with sheep. Sow the dice of grapefruit on one half, up to 2 cm from the edge. Wrap tight in the film. Place 2 hours in the fridge.

Step 4

To serve: spread the arugula on a dish; unwrap, put the rollers on it. Sow the rest of grapefruit in dice. Add fleur de sel in the coriander oil, spread over the rolls, sow the rest of the berries.
