Made from buffalo milk or cow's milk, mozzarella is an excellent source of calcium, essential for mineralization of bones and teeth while preventing osteoporosis. Phosphorus also plays a key role in the regeneration of tissues. Rich in protein, the same as that of meat, mozzarella is a food that helps maintain muscle. How to choose your mozzarella

Initially made from buffalo milk (the famous name "di bufala"), it now comes in cow's milk, much cheaper to produce and transform. Industrial mozzarella is therefore often chewy and bland. It has nothing to do with its artisanal girlfriend: protected by a STG (Italian Appellation d'Origine Contrôlée), traditional mozzarella is tasty, creamy, slightly tart. A little more expensive, book it for all your cold tastings. For your hot preparations, the industrial mozzarella turns out to be a good joker: the passage to warm making it gain in smoothness.
